Ingredients:
3 cups sticky/sweet rice
3 cups water
1 can (13.5 oz) coconut milk
1.5 cup brown sugar
Direction:
1. In a rice cooker, mix rice and water. Steam cook and set aside.
2. In a big wok/pan, mix coconut milk and sugar. Bring to a boil on medium high heat, stirring continuously.
3. Boil for about 10-15mins or until reduced by half and consistency is creamy.
4. Add boiled rice slowly and mix thoroughly
5. Reduce heat to medium low and continue stirring.
6. Biko is done when it doesn't spread too much when left without stirring.
