Ingredients
6 eggs, room temperature
1 cup milk, room temperature
1 cup flour
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
5 tbsp butter
Powdered sugar
Directions
1. Preheat oven to 450 degrees F
2. In a large bowl or blender, beat the eggs until light and frothy then add milk, flour, vanilla extract and cinnamon; beat for 5 minutes more. The batter should be thin very smooth and creamy.
3. Melt the butter and put in the baking pan.
4. Pour the prepared batter and put in the oven
5. Bake approximately 20 to 25mind or until puffed and golden brown.
6. Remove the pancake from the oven. Once out of the oven, the pancake will begin to deflate.
7. Cut into serving size wedged and transfer to serving plate. Top with powdered sugar or any of your favorite topping.
