Ingredients:
- about a pound of pork shoulder sliced into cubes
- jalapeños (5 to 6 pieces)
- 1 can coconut milk
- 1 pc. onion, sliced
- 3-4 cloves of garlic, minced
- 1 tomato, sliced
- 1 medium size eggplant, sliced
- 1 tbsp of sugar
- fish sauce (patis)
Directions:
1. Saute garlic, onion and tomato then add pork and cook until light brown
2. Add fish sauce and simmer for about 5mins
3. Add coconut milk and simmer for about 10-15mins (if you want more spicy then add jalapeños immediately after adding coconut milk).
4. Add jalapeños, eggplant and sugar and simmer for another 10mins or until thick and creamy
5. Serve with hot rice!
