For this recipe, I grilled chicken breast fillet seasoned with salt and pepper. Then tossed with lettuce, cucumber, corn kernels and sliced olives and for dressing, I used Lite honey mustard (just eyeball everything). Try this and enjoy and be healthy! :)
I made this just earlier. I was planning to make the typical doughnut but realized that I don't have enough oil to use for deep frying so I searched other recipe and found this baked doughnut. I don't have all the required ingredients so I just used whatever I have and it still turned out great!
Ingredients: 3 cups all purpose flour 4 tsp baking powder 1 1/2 cups sugar 1/2 tsp salt 1/2 tsp cinnamon powder 1 cup butter, softened 2 eggs 1 cup milk Procedure: 1. Mix the flour, baking powder and salt and set aside. 2. Blend 1/2 cup and 2 tbsp of butter and 1 cup sugar then add 2 eggs. Mix them thoroughly. 3. Mix the flour mixture to butter mixture and add the milk. 4. Preheat oven to 350 F 5. Pour batter into a muffin pan and bake for 15 to 20 minutes or until light brown. 6. Melt the remaining 6 tbsp of butter 7. Mix 1/2 tsp of cinnammon and 1/2 cup sugar 8. While the baked doughnut is still warm, roll them into melted butter then to cinnamon sugar mixture. My version of sopas has no chicken but just chicken broth with different kinds of veggies: cabbage, carrots, peas, green beans and corn kernel with loads of fresh milk and butter. It was a hit for the fam! Delish!!! :) |
